Santorini
The archaeological and beach zone: the Minoan city buried by a volcano, volcanic red-and-black beaches, the lighthouse sunset alternative, and wineries with caldera views.
The south of Santorini centres on Akrotiri, the Minoan city buried by the volcanic eruption of 1627 BC. The archaeological site (EUR 12) is often called the "Greek Pompeii": two-storey buildings, a drainage system, and the remains of a civilization that had flushing toilets 3,600 years ago. The original frescoes were moved to Athens, but the architecture remains extraordinary. Red Beach is a 5-minute walk from Akrotiri village: volcanic red and black cliffs that look like Mars, accessed by a short scramble (arrive before 10 AM as parking fills quickly). The Akrotiri Lighthouse at the southern tip of the island is the alternative sunset spot - 20 people instead of 15,000 at Oia, bring your own wine. The southern wineries (Santo Wines EUR 10-15 tasting with caldera views, Venetsanos Winery EUR 8-12) produce Assyrtiko from grapes grown in basket shapes called kouloura to survive the Meltemi wind.

The archaeological site opens at 8 AM. Go at opening to avoid the heat and the cruise ship groups that arrive by 10 AM. The site is covered but not air-conditioned. Allow 1-1.5 hours. The EUR 12 entry is worth it if you have any interest in ancient history.
The Akrotiri Lighthouse is the locals' sunset spot. No restaurants, no crowds - just a cliff, the sea, and the sun dropping below the horizon. Buy a bottle of Assyrtiko (EUR 8-12) and arrive 45 minutes before sunset. Maybe 20-30 people on a busy night.
